It's summertime and I love the colors that come with it! Bright leaves on the trees, blooming flowers and colorful recipes. This raspberry mint appetizer is very simple to make and your guests will not be able to resist tasting one! I always struggle to find something new but simple to make when I am entertaining. There's so many things I need to focus on besides the food, cleaning up, making sure the beverages are cold, picking up all of the toys, the list goes on! I love trying new recipes while entertaining because my family isn't always too keen on my creations. My son sees green and automatically "doesn't like it" even though he hasn't touched it.
With the crispy bread base and the creamy cottage cheese spread, the juicy flavorful raspberries will add sweetness while the mint helps to bring all the flavors together. You can substitute blackberries, blueberries or strawberries for the raspberries or do a combo of several berries. You can also use French bread, rather than Italian, or try melba toast, or cocktail bread found at your grocery store in the bakery section. I prefer to bake my bread to toast it and crispen the edges, but you can use day old bread and let it set out to harden a bit.
It's easiest to make this just before serving, but you can have everything ready to go - raspberries washed and dried, mint chopped and bread sliced. Assemble just before your guests arrive. To assemble, top bread with cottage cheese and spread around, add raspberries and mint and share!
