This easy home cooked comfort meal is perfect for holiday potlucks!

Cooler weather has finally hit where I live and the days are shorter and the nights are longer. Okay, maybe they aren't any longer than normal, but they certainly are darker! I have to admit, I love the cooler weather and knowing that Christmas is only a few short weeks away. We don't have snow yet but soon there will be no end in sight for the white stuff. When the holidays hit I start thinking about holiday get together's with friends and family. We take turns hosting a potluck once a year during the holiday season. Each one of us bring a dish or two to share and we reconnect while the kids run around and play.

When I want comfort food but want to put a healthier spin on things I turn to Dannon Oikos Greek Yogurt. Yogurt? Yep, you read that right. I head to my local Meijer store where they sell a variety of Dannon Oikos in different flavors. Oikos Traditional Yogurt has non-GMO ingredients, and I've found it's a great substitute for sour cream and is a simple and easy way to eat healthier on a daily basis, including holiday potlucks. I love how versatile it is and my friends and family enjoy it just as much as I do.

I took Dannon Oikos Plain Greek Yogurt and put a spin on my classic beef stroganoff recipe. I used the yogurt in place of sour cream and I heard zero complaints from my friends and family. I'm even willing to bet the Greek yogurt was actually creamier than sour cream once it was incorporated into the recipe. This one is definitely a keeper!

Creamy Beef Stroganoff

This easy home cooked comfort meal is perfect for cold winter nights!

Cook Time 30 minutes

Total Time 45 minutes

Ingredients

• 1 pound beef stew meat, cut into quarters
• 2 tbsp. olive oil
• 1 small onion, sliced
• 2-3 cloves fresh garlic, sliced
• 10.5 oz can of cream of mushroom soup
• 5 oz can of mushroom slices
• 1 C. Dannon Oikos Plain Greek Yogurt
• 1 C. beef broth
• salt & pepper to taste
• 10 oz package of egg noodles

Instructions

Heat the 2 tablespoons of olive oil in a large saucepan or dutch oven on medium heat.

Add in the sliced onion, garlic and 1 pound of meat (see photo).

Brown the meat for 15-20 minutes, until cooked through.

Add in the cream of mushroom soup, 1 cup of Dannon Oikos Plain Greek Yogurt and mushrooms. If the mixture is too thick, add in the beef broth ¼ cup at a time.

Let the stroganoff simmer on low/medium heat.

While the stroganoff is simmering, cook the egg noodles according to the package directions.

Once the noodles are cooked through, serve the stroganoff on top. Add an extra dollop of creamy Plain Greek Yogurt if you wish.
