Every year around Earth Day my husband and I try really hard to bring awareness of our planet to our children. I always have big ideas and plans to pick up recycling and litter from the roadsides. But often in April, there are still banks of melting snow on the sides of the road and lots of mud. So, I find myself moving toward indoor Earth Day solutions!

One thing I love to do with my kids is make Earth Day Snacks! My kids L-O-V-E snacks. They tell me this by asking every 30 seconds, "Can I have a snack?" Whenever I come up with a fun snack, I turn into a SUPER MOM! Or at least I like to think I do!

This year, we're making edible butterflies for our Earth Day Snacks! With the help of SUPERPRETZEL, we can create our own unique butterfly! I usually take this opportunity to talk to the kids about where some of our food comes from (the ground) and how we must take care of our planet by recycling, picking up litter and not dumping toxic chemicals in the soil in order to grow delicious food.

How to Make Earth Day Snacks

First you need to head to the freezer section of your local grocery store to grab an original 6ct. box of SUPERPRETZEL. And while you're at it, download this coupon to save 50 cents!

Grab some of your favorite fresh vegetables such as carrots, broccoli, cauliflower and red peppers.

One of my favorite things about SUPERPRETZEL Soft Pretzels is that my kids can "make" them. My kids love to get the box out of the freezer, open the bag and pick just the right pretzel to put onto their plate. We add a little water with dampened fingers and sprinkle salt on them. The kids always feel like they are taking part in these Earth Day snacks and it makes for a fun time in the kitchen.

I handle all of the vegetable cutting and the actual heating of the pretzel in the microwave, but the kids create their own unique butterfly, and love to show it off when they are done.

While my kids are content with making their Earth Day snacks and eating them, my husband and I like to add a little cheesy dipping sauce to the SUPERPRETZEL Soft Pretzels. We also create our own Earth Day butterfly and enjoy dipping our fresh vegetables into the cheese dip as well!

Earth Day Snacks are simple and easy to make for the kids with the help of SUPERPRETZEL!

Ingredients

For an Earth Day Butterfly

  • 2 SUPERPRETZEL Original Pretzels
  • Fresh Cauliflower, cut into bite size pieces
  • Fresh Broccoli, cut into bite size pieces
  • Fresh Baby Carrots, cut into small pieces lengthwise
  • Fresh Red Pepper, sliced into strips

For Cheese Dip

  • 4 ounces Cream Cheese, softened
  • ¼ cup Sour Cream
  • ¼ cup Half & Half
  • 1 teaspoon Dijon Mustard
  • ½ teaspoon Garlic Powder
  • 1 cup Shredded Cheddar Cheese
  • Green Onions, thinly sliced for topping

Instructions

To Make an Earth Day Butterfly

  1. Heat 2 pretzels according to package directions, adding salt if desired. Place onto a large plate as shown, with the bottoms facing each other.
  2. Fill each pretzel cavity with fresh broccoli, cauliflower and carrots.
  3. Use sliced red peppers to create the body and 1 pepper cut in half for the antenna.
  4. Enjoy as-is or dip pretzel and vegetables into cheese dip.

To Make Cheese Dip

  1. Preheat oven to 375.
  2. Add cream cheese, sour cream, half and half, mustard and garlic powder into a mixing bowl and mix well. Stir in cheddar cheese. Pour into a small baking dish.
  3. Bake for 10-15 minutes or until cheese is hot in the center.
  4. Garnish with sliced green onions and dip pretzels and vegetables into hot dip.

    We celebrate Earth Day every year. My partner takes off from work for the day and we do something outside, weather permitting, that celebrates all that nature gives us every day. It could be as simple as going to a park or enjoying the nature in our own yard. But we take a moment and stop and observe and appreciate this planet that hosts us.
