I can honestly say I haven't jumped on the quinoa band wagon since it seemed to become very popular several years ago! But, every now and again I grab a bag of quinoa and try to figure out how to incorporate it into my family's meals.
This time, I made some quinoa for myself, just to enjoy as a side dish. For some reason, I made the entire bag of quinoa, so I had a lot left over! That's when I decided to get creative and make this tasty corn and black bean quinoa recipe.
This dish is really good. It's full of flavor and is very flexible. If you don't like black beans, try pinto or black eyed peas. You can easily add a can of diced tomatoes if you'd like more vegetables. Or add some cooked shredded chicken to the skillet and you'll have a complete meal! You can use this as a meatless Monday dish or as a tasty side for your family or a pot luck!
This quinoa recipe is best served warm, and next time I'm going to add a little to a flour tortilla and wrap it up like a burrito for a savory lunchtime meal! Topped with fresh cilantro, this quinoa recipe has a Mexican flavor. You can add more spice by using hot sauce or some cayenne pepper. My favorite part is that you can quickly make it in one pan on the stove top! A full belly and less dishes to wash makes me HAPPY!
