Growing up, my grandmother made butter cookies all. the. time. I would often sneak bites of the cookie dough when she wasn't looking and then grab a few cookies as I walked out the door and would snack on them walking home. I still enjoy butter cookies to this day but I also adore anything with lemon. So what would be better than a homemade, melt in your mouth butter cookie but with a simple twist of fresh lemon? Yeah, that's what I thought.

These cookies are delicious alone but I like to enjoy mine with a steaming hot cup of coffee as soon as the kids are out the door in the morning. Yum! I might even qualify that as breakfast some mornings. Don't judge.
