This one pot mac & cheese is easy and delicious!
Raise your hand if you love mac & cheese. Here at Craft Create Cook we love pasta. We also love cheese. So yes, we love mac & cheese. Our kids love mac & cheese, too, so it's something we are always stocking up on whenever it's on sale.
My kids absolutely love the organic Horizon mac & cheese. They call it the 'cow' mac & cheese. I like it, too, and will happily eat a box of it when no one is looking. That being said, sometimes we run out and then I'm of out of luck. It's then I turn to my pantry and hope I have everything to make a pot of homemade mac & cheese. Luckily, this recipe is simple and I usually do have most ingredients. I used whole milk for this recipe, which makes it rich and creamy but even if you use low fat milk, it will still be yummy. And cheesy. That's the most important part. The cheese.
So, let's make some pasta! First, you will want to boil a large pot of water. I never measure, I just fill a large pot ¾ full of water and add some olive oil so the noodles don't stick. Bring to a boil and add in the noodles. Cook the noodles for 9-11 minutes. You want them cooked through, but not mushy. No one likes mushy noodles. Remove from heat, drain and rinse with cool water. Set aside.
Now, grab your other ingredients. Melt the ½ cup of butter in the same pot you cooked the noodles. I am all about easy and the less dirty dishes I have to wash, the better. Once the butter is melted, add in the ¼ cup of flour and whisk while it thickens. Add in the ½ of the milk stirring continuously and then add in the other ½. Lastly, add in your yummy shredded cheese and allow it to melt. Mmmmmmm, cheese.....
Once it's all melted, add the cooked pasta back in and stir to combine. Add some salt & pepper to taste and that's it! Easy 1 pot mac & cheese that your kids will love!
