My kids love chocolate milk. When I was growing up it was a special treat and most times we would make our own at home with help from mom. Now that I'm an adult, I love buying chocolate milk for my kids. I buy it at least once a week and it honestly doesn't last long in our home. My son loves regular white milk but my daughters aren't huge fans so we often have TruMoo brand chocolate milk in the fridge.
Because we have TruMoo chocolate milk on hand every week, I love getting creative and using it in recipes. With school back in session I am struggling with school lunches. My kids refuse to eat hot lunch most days and we're in a grey area where they still need help packing their lunches before school. Because I love getting creative in the kitchen I wanted to focus on kid-friendly recipe that is perfect for back to school lunches or after school snacks.
One of my favorite cold lunches to pack for the kids is breakfast. I almost always have homemade pancakes or french toast in the freezer. I simply pull a few out while packing lunches, throw them into the lunch box and then they are thawed by lunch time. My kids love pancakes almost as much as they love chocolate milk too so I put together an easy recipe for mini chocolate milk pancakes that the kids could take for lunch.
I wanted to make it fun and everything just tastes better on a stick! I added some fresh fruit and had a healthy lunch idea for the kids. Using TruMoo chocolate milk makes me smile because there are no artificial growth hormones or high-fructose corn syrup and it’s GMO free!
The great thing about pancakes is the kids can help makes them! My daughters love nothing more than to get into the kitchen and help mom with whatever I am making and this recipe is a great way to get your kids involved!
Mini Chocolate Milk Pancakes
Ingredients:
- 1 C. TruMoo chocolate milk
- 1 C. flour
- ⅓ C. unsweetened cocoa powder
- 1 egg
- 1 tsp. baking powder
- 1 tbsp. sugar
- 2 tbsp. melted butter
- ½ pound fresh strawberries, tops removed
- 2 C. fresh pineapple chunks
- medium size wooden BBQ skewers
Directions:
- Whisk together the flour, unsweetened cocoa powder and baking powder.
- Add in the egg, melted butter and 1 cup of TruMoo chocolate milk.
- Preheat a large skillet on medium/high heat.
- Once the skillet is heated, use a ⅛ measuring cup to scoop and pour the chocolate milk pancake
- batter onto the heated surface. My kids love helping with that part.
- Allow the bottom of the mini pancakes to brown and when the tops have bubbled, flip the pancakes and allow the other side to brown.
- Once the pancakes have cooked through, remove them from the skillet.
To assemble the skewers take one wooden skewer and follow this pattern:
- 2 mini chocolate milk pancakes
- 1 piece of fresh fruit
- 2 mini chocolate milk pancakes
- 1 piece of fresh fruit
- 2 mini chocolate milk pancakes.
My kids loved helping put the pancakes sticks together and even more fun eating them!
