Our easy no bake eclipse cookies are the perfect snacks to make for before you view the solar eclipse.
Okay, so I have to admit I didn't exactly know much about he solar eclipse was until a friend explained it to me the other day. It seems like everyone is taking about it, every other Facebook post is about where you can see the eclipse in your area and everyone is selling out of safe viewing glasses (which are now going for ten times their original price.)
I'm not even going to try to explain this upcoming solar eclipse to you, but I do know that it sounds like its going to be a beautiful sight with the moon slowing starting to go in front of the sun (and if you're not in a full viewing area, this is all you will see, but still very cool.)
A solar eclipse isn't extremely rare, it happens once every 18 months or so, but you cannot always see the solar eclipse in your area. So that's why this seems like a big deal to us. If you cannot view the eclipse in your area due to cloudy weather or your schedule, make these eclipse cookies and share in the fun!
How to make easy no bake solar eclipse cookies
Ingredients:
- Ritz Crackers
- Peanut Butter
- Pretzel Sticks
- Wilton Yellow Candy Melts
- Wilton Black Candy Melts
- Coconut Oil
You will also need:
- Baking Pan
- Cooling Rack
- Parchment Paper
Directions:
- Lay out a piece of parchment paper onto a cookie sheet and place a cookie cooling rack on top.
- Spread a little peanut butter onto one Ritz cracker, break 4 pretzel sticks in half and place the rough end of all 8 pieces onto the peanut butter with the ends sticking out and then sandwich a second Ritz cracker on top to look like a sun.
- Place your suns on your cooling rack.
- Heat 2 cups of yellow candy melts and 1 tablespoon of coconut oil on 50% power for 2-3 minutes, stirring every 30 seconds until melted.
- Use a spoon to pour your melted yellow chocolate over your sun cracker sandwiches, shake the cooling rack and let the excess drip off onto the parchment paper (you can always scoop off the excess and remelt).
- Then place 1 single Ritz for every sun onto the cooling rack for your moons.
- Heat 1 cup of black candy melts and ½ tablespoon of coconut oil on 50% power for 2-3 minutes, stirring every 30 seconds until melted.
- Use a spoon to pour your melted black chocolate over your Ritz crackers, shake the cooling rack and let the excess drip off onto the parchment paper.
- Once you have a full pan, transfer to the fridge to harden for about 15 minutes.
- Place your black moon crackers over top of your sunshine cracker sandwiches to explain the solar eclipse to your kids.
Alternately you can always a chocolate covered cookie such as a Keebler Grasshopper if you don't want to cover a cracker with black candy melts. But the size of your cookie may not match the size of your cracker.
On August 21st, you will be able to view some sort of the solar eclipse from every U.S. state. What an amazing time to be alive and witness this, just make sure to wear the proper viewing glasses, grab these eclipse cookies and enjoy this special day.
