Groundhog Day Cupcakes

No matter what the prediction, these Groundhog Day Cupcakes will bring a smile to your family!

I live near Michigan's official Groundhog, Woody. He resides at the Howell Nature Center in a very comfortable den and every February he comes out to give his seasonal prediction.

Although I've been to the Nature Center several times, I've never actually seen Woody. Or perhaps I wasn't really looking for him, that could have been the case. On one visit I was hiking around with a troop of Daisy Girl Scouts and on the other occasion I was soaking my toes in the waterfall. It was a fun filled family day, that's for sure.

If I had to guess, this year, Woody will not see his shadow and Spring will be here before we know it. In my neck of the woods, we haven't had any snow in January and what we did have melted. Instead of snow, it's raining. A lot. Everything is muddy and wet and gloomy and reminds me of March. I really hope I don't have to deal with a thaw again in March, but I'm sure I will since it's Michigan and the weather can be truly crazy!

So what do you to celebrate Groundhog Day? Nothing?!? Me neither! But this year I decided to make these cute Groundhog Day Cupcakes for the kids to enjoy! I think they look pretty cute, but my 7 year old thought maybe it was a hippo or a cow! Who knows where that came from!

How to Make Groundhog Day Cupcakes

Once you make your favorite cupcakes, grab a few decorating supplies to get going!

Cupcakes, baked and cooled completely
1 tub chocolate frosting (I used Pillsbury Chocolate Fudge)
Whoppers (Malted Milk Balls)
Reese's Pieces, only the brown ones
Candy Eyes
Wilton White Sparkle Gel
Chocolate Jimmies
Coconut Flakes
Green Food Coloring & Water

Frost your cupcake with chocolate frosting.
Add 2 whoppers on the top of the cupcake for the cheeks
Add 2 candy eyes above the cheeks.
Add 2 ears at the top of the head, above the eyes using brown Reese's Pieces.
Sprinkle the top of the cupcake with chocolate jimmies. Gently shake off loose jimmies.
Gently press down the jimmies under the cheeks before you add the teeth.
Use white sparkle gel to draw two teeth onto the groundhog.
Place your groundhog onto a bed of green grass. To make grass, pour about ¾ cup of coconut flakes into a sealable bag. Add a few drops of green food coloring and about 1 teaspoon water. Seal the bag and knead the coconut until the desired color is reached. You may need to add a little bit more color or water depending on your desired outcome.
