Whether you are following the keto diet or not, this egg salad with avocado is an easy lunch idea that everyone will love.
Confession time: I had never tried egg salad until earlier this year. I know, crazy. At some point in my childhood I had decided it looked completely unappealing and never once even tasted it for 38 years. It may have stemmed from my dislike of hard boiled eggs, which I thought were pretty disappointing inside all those beautifully colored Easter egg shells when I was a kid.
That all changed once my family got on a keto diet kick. I was desperate to find easy, make ahead foods that could be prepared in batches for the week. I started out with scrambled eggs, but making them daily was not working. Over the years I had tolerated hard boiled eggs on cobb salad, so I thought it was worth trying them again.
I have since grown to love hard boiled eggs! They are so easy to make and store for later, as well as a perfect staple to a high fat, low carb diet.
I began experimenting with egg salad too, which I must admit I have grown to like a lot. Once I got the perfect recipe down and added avocado to the mix, it has become a daily staple and favorite in our house!
Ingredients
- 8 large hard boiled eggs, peeled
- ½ cup mayo
- 1 teaspoon mustard
- ¼ teaspoon onion power
- pinch pepper and salt
- 1 avocado
Start by roughly chopping your eggs. You do not have to cut them perfectly even, just slice and dice them to varying size pieces.
In a medium bowl, add the eggs, mayo, mustard, onion powder, salt and pepper. Stir gently until combined. I like to use a rubber cake spatula like this to fold the ingredients together, rather than whip or stir, so the larger pieces of egg remain.
Adding the Avocado
Chop the avocado into one inch chunks and add to the mixture, lightly stirring. The goal is not to mush or crush the pieces, just incorporate them into the egg salad.
And that is it. Add some more salt and pepper to taste and enjoy!

- Remove the shells from the eggs and chop.
- In a medium bowl, add the eggs, mayo, mustard, onion powder, salt and pepper.

- Add more salt and pepper as desired and enjoy!
