With only 6 ingredients, you cannot go wrong with these simple chocolate chip pumpkin muffins!
It's been floating around the internet for awhile, it's the 2 ingredient pumpkin bars or muffins that use only a box of cake mix and a can of pumpkin puree. Well, I couldn't let it be that simple! I had to take things to the next level and make sure these chocolate chip pumpkin muffins are amazing!
I've made these twice now, and the second time I omitted the walnuts and they were still awesome! This nut free variation is certainly something you can do as well!
How to Make Chocolate Chip Pumpkin Muffins
You'll want to use a hand mixer for the pumpkin muffins. The dough is dense and stiff and won't mix well by hand. I like to use this inexpensive mixer.
My best advice I can give when making these muffins is to generously grease the muffin pan with nonstick cooking spray. If you end up using the same baking pan for the second batch, make sure you grease it in between refilling with batter.
I also love using a 3 tablespoon portion scoop. It measures the batter perfectly and prevents over or under filling the muffin pan.
As I mentioned earlier, you can always omit the walnuts, or if you like nuts, you can use chopped pecans, sliced almonds or even ground peanuts! The possibilities are almost endless!
My pumpkin muffins are amazing! They are a denser cake-like muffin that has a nice blend of chocolate and walnuts. The chocolate chips and nuts add a nice texture when you enjoy them. Try one (or two) with a hot cup of coffee!
